How resourceful are you?


Definition: able to deal skillfully and promptly with new situations, difficulties, etc (

As a vegetarian or vegan, we become resourceful. I indicated in Sister Vegetarian’s 31 Days of Drama-Free Living of how we become creative as vegetarians and vegans not only in the kitchen, but in many aspects of our daily existence when we think more of the positive impact that our lifestyle as a vegetarian or vegan can have on saving the environment, animals, and renewing our health. We try to think of ways to leave less than a footprint or “leave no trace” on Mother Earth as we hikers and backpackers say when on trails.

We are resourceful in finding new ways to make a once favorite meat-based meal turn into a veggie delight as vegetarians or vegans; resourceful in saving the environment by using natural remedies and natural recipes for household cleaning; resourceful in making gifts, our own clothes, or household items. As a knitter, I find myself knitting dish cloths, wash cloths, and dish towels from 100% cotton-grown in America. I also found out in knitting these items that 1 ball of 100% American grown and manufactured cotton is only approximately $1.75 and makes 2 soft and eco-friendly dishcloths or wash cloths. Try purchasing 2 machine made dish cloths or wash cloths for $1.75 that is not made from 100% cotton grown in the USA.

I also find myself planting vegetables, making funky clothing with an idea of a design that I cannot find in stores, and knitting afghans to cuddle up with on cool spring nights. I have also resulted to knitting gifts for birthdays, and other events.

When looking for a vegan salad dressing, I thought of a delicious vegan salad dressing made from common vegetarian and vegan staple ingredients that we normal have in our refrigerator and pantry. The salad dressing took less than 10 minutes at a saving of less than $1.50

Donna’s Almond-Tomato Vegan salad Dressing

1 cup of organic almond milk
1 cup canned diced tomatoes
¼ cup of chopped onions
½ of a small jalapeno pepper
1 clove of garlic
2 TBSP nutritional yeast

Blend in a blender until smooth. Pour in a reusable glass salad dressing bottle or other glass bottle. Chill until ready to serve. Keep refrigerated for 5 days.
