I have not been sick in 3 years as a vegan plus All In One: Raw Vegan Spicy Beet Relish and Raw Vegan Spicy Beet Sloppy Joes

I have not been sick in over 3 years since becoming a vegetarian and then a vegan. I have never taken a flu shot in my life, and my body has been free of cold viruses, flus, and other common viruses that seem to be associated with winter, late falls, and any change of seasons. Yes, I am exposed to sick people daily as an employee in a medical office surrounded by patients and fellow employees coming into the office with flus and colds. My husband has even been sick a couple of times and although he is a vegetarian as of this past June 2011, I am the one that eats vegan whole foods...and especially raw vegan meals...so our kitchen pots usually see a 2 varied meal preparation because I love my vegan and raw vegan lifestyle and the beautiful affect that it not only has on my body at age 45 but also on the environment and saving animals.

I have a feeling that I have not been sick in over 3 years because I base my meals on whole foods rather than vegan junk foods. As I stated in Sister Vegetarian's 31 Days of Drama-Free Living's Day 1 entitled " Victory," I eat on a daily basis my greens raw (collard greens, turnip greens, mustard greens, kale, beet greens, and Swiss Chards) whether for lunch or incorporated into my dinners. I also saute my greens; however, on the average I eat my greens raw for the antioxidants and disease fighting properties that these beautiful bounties from Mother Earth provides through its phytonutrients produced by the sun.

In Day 1 of Sister Vegetarian's 31 Days, I also mention how throughout history, beets have been the backbone behind many living in Eastern Europe who have lived to be 100 years old-this including my great-grandmother from San Francisco who also ate beets practically daily and lived to be 100. I also eat my beets raw for the antioxidant, anti-inflammatory, and cancer prevention properties beets provide (reference WH Foods.com).

In tribute to the antioxidant packed vegetables provided by Mother Nature in its pure form without cooking, I share my recipe for a "Raw Vegan Spicy Beet Relish." My intentions was first to make one of my favorite beet soups, but when I started to combine the beets in my food processor, I said to myself ..."Sister V....get creative and make a signature raw vegan beet sloppy joe from a beet relish that can be versatile and made into other meals." Well, here's my end result. I call it a "beet relish" because it looks like a relish, but the spiciness, sweetness, and earthiness makes it a meal in of itself rather than just a relish.



Sister Vegetarian's All In One: Raw Vegan Spicy Beet Relish and Raw Vegan Spicy Beet Sloppy Joes

Ingredients:

2 large beets, de-stemmed, washed, and cut in chunks with the skin left on for added nutrients
1 large tomato
1/2 cup raisins
1 tsp Five Spice Chinese Powder
1 tsp smoked paprika
1/4 tsp ground chipotle
2 TBSP extra virgin olive oil
1 small jalapeno pepper, chopped
1 tsp raw apples cider vinegar

Directions:
Place everything in a food processor. Process until it's combined-not smooth-but looks like a relish (a fine chunkiness)

Serving Suggestions: Use as a filling for the Spicy Raw Vegan Sloppy Joe below, in raw greens salads, in soups, as a spread on bread or appetizers for parties, and more! Be creative and enjoy this delicious bounty from Mother Earth!


Spicy Raw Vegan Beet Sloppy Joe



Ingredients:


Spicy Raw Vegan Relish (recipe above)

2 hard rolls or 2 soft rolls

Directions:

-Cut a round hard roll in half
- Add olive olive, sprinkled ground garlic, and sprinkled sage on each side of the roll
- Place in a broiler and broil until golden
- remove from the broiler and cool until ok to touch
- Add the beet relish on each side of the roll along with raw collard green leaves that have been washed and chopped.
- Put both side of the sandwich roll together to form a sandwich and enjoy!
