"The new Dietary Guidelines for Americans devote more attention to vegetarian and vegan diets than any previous version of the Guidelines. The new Guidelines devote two full pages to vegetarian and vegan nutrition and point out that these eating patterns provide nutritional advantages and reduce obesity, heart disease, and overall mortality."

Sister's Curry-Turmeric Scrambled Tofu with Pinto Beans















I love being a vegan! As a vegetarian and then a vegan, I never found myself pondering what will I eat for dinner. I always have a spark of creativity in the kitchen to try a twist from a well used recipe for a meal that is quick and nutritiously satisfying. I took a basic breakfast scrambled tofu recipe and jazzed it up for an after-work dinner that was filling, delicious, and quick to prepare in 20 mins or less.

Sister's Curry-Turmeric Scrambled Tofu with Pinto Beans
Servings: 2
Time to cook: 12 to 17 minutes
Ingredients:
  • 1 16 oz firm tofu, drained and pressed
  • 1/2 yellow onion, chopped
  • 1/2 green bell pepper, diced
  • 1 cup yellow squash, chopped
  • 1 cup raw turnips greens, roughly chopped with veins and stems left on
  • 1/2 jalapeno pepper diced ( I left the vein and seeds intact-but remove for less fire)
  • 1 medium cubanelle pepper, diced
  • 2 tbsp olive oil
  • 1 tsp turmeric, ground
  • 1 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried parsley
  • 2 tbsp Braggs Liquid Aminos
  • 2 tbsp nutritional yeast
  • 1 15 oz can pinto beans, rinsed and drained
  • garnish: avocado chopped

Directions:

1. Heat olive oil in pan
2. Crumble tofu into pan.
3. Add onions, green peppers, jalapeno pepper, cubanelle pepper, squash, and turnip greens. Saute all for 5 mins.
4. Add remaining ingredients, except beans. Cook on medium heat for 5 to 7 mins until tofu looks like water has drained out and it is fluffy.
5. Add beans and combine with all ingredients. Heat for 2-5 minutes.
6. Plate and serve. Top with avocado.
Additional serving idea: Spread vegan sour cream on a tortilla. Place half of scrambled tofu on a tortilla, and roll.

A very thought provoking and deep speech on Veganism and Animal Rights

After being a vegetarian for over a year, I finally stepped on my long-term life path of being a vegan 4 weeks ago. I received this link today from the local vegan group that I joined a year ago called The Triangle Vegan Action group. The video was taped at Georgia Tech, and it pertains to not only animal rights activism but why you should lead a vegan lifestyle (especially if you are a vegetarian hooked on cheese as though it's cocaine). This speech is very DEEP and thought provoking. It makes you think about the TV ads and it gives you a deeper understanding of veganism whether you are a meat eater, vegetarian, or even a vegan.
