Tuesday's Inspirational Thought of The Day & Documentary Suggestion: Food Matters

Food Matters is an eye opening documentary that I suggest to all vegetarians and non vegetarians. Today's inspiration as taken from Food Matters documentary website below: "Let thy Food be thy Medicine and thy Medicine be thy Food" - Hippocrates. That is the message from the founding father of modern medicine echoed in the controversial new documentary film Food Matters from Producer-Directors James Colquhoun and Laurentine ten Bosch.

note: Netflix Watch It Now has this movie available for direct stream to your computer, TV, or via DVD.

Bonus Inspirational Thought of The Day

Bonus Inspirational Thought of the Day that fueled my 20 mile run today to prep for a 26.2 marathon:
Act as if you already are. This is one of the many mantras that we employ when it comes time to go after a goal that is beyond what has already been accomplished. Breaking new ground physically requires you to first break that mental barrier so that it can come into being. ~Terrence Mahon, Team Running USA's head coach

Thursday's Inspirational Thought of The Day:
“If you have only one smile in you, give it to the people you love. Don't be surly at home, then go out in the street and start grinning 'Good morning' at total strangers.”

Finished Strong Today at Marathon Race Thanks to a Vegetarian Lifestyle

Go Vegetarian Runners!!! I owe my strong finish to a vegetarian lifestyle! Not even huffing and puffing. Ran non-stop. Finished my half marathon in 2:21. It was fun from the Catholic priest at mile 2 downtown with coffee in one hand and blessing runners with the other hand in front of the Catholic Church. The downtown gym class brought 10 spinner stationary bikes out and cheered us on. People sitting on their porches cheering us. A marine ran in full combat uniform with his combat bag on his bag stuffed. The college students with the noise makers called vuvuzela..used at soccer games...most of downtown and midtown was closed. Woke up 4:45 AM. Race started 7 AM. 30 degrees this AM. Started to finally feel my feet at mile 2 as I warmed up. I love you hubby!! I'll be at Boston's Half next Oct :) I'm ready for 26.2 miles in March. I felt great and finished super strong at a fast pace. Not even breathing hard :) A picnic in the park. It was fun :)

New Recipe in Sister's Recipe Section: Saute Chayote

Quick. Delicious. Nutritious. The buttery beets plays against the beautiful buttery flavor of the Chayote. The garlic adds a little spice and blends with the natural buttery taste of the vegetables.

View the Recipe Here: Saute Chayote, Beets, and Turnip Greens served on top of Wheat Sphaghetti.
